The importance of a good, large wooden board is understated. It makes a "I mean business" statement and delivers on its message.

Watching hours of Jamie Oliver's youtube cooking videos, I saw how effortlessly he prepped so much food on a sturdy board. From chopping veggies, assembling food and even serving, this board is essential for a small kitchen set up.

Grilled Chicken, Spinach, Cheese Sandwich

  • Grate whatever cheese you have. I happened to have Cheddar and Parmesan. Grating cheese instead of those pre shredded ones really make a difference. I cling wrap tightly unused portions and place them into airtight containers/ziplock baggies. Last awhile, so GRATE YOUR CHEESE. Also, grating directly onto the board. Don't need to bother with another bowl.
  • Scissor cut into thumb size cubes the leftover grilled chicken. Toss with grated cheese, then pile onto a slice of bread, cover with another slice when done.
  • I deliberately did not butter both sides of the toast. I find that the cheese is already oily enough and I don't want to feel heavy and uncomfortable after this meal. So I just place the assembled cold sandwich into a pan, cover and steam/toast under lowest heat. By steam, I usually have a water spray bottle that I can spray the pan and the bread. This helped revive the bread but not make it soggy.
  • Once both sides were my desired crustiness and golden, I place the hot sandwich on the board, open it up. The cheese and chicken should be gooey and steamy. Then I pile on the washed veggies, which today I had spinach.
  • Cover the sandwich back up, slice in half and enjoy the 5 mins in comfort. YUM!

So there, 15 mins lunch including clean up. In the past, 15 mins might not even be enough time for me to decide what I want to order on UberEats. The best part is now I realized that these 15 mins lunch are so simple and usually quite light. This means I don't feel so doozy sleepy after I eat, which also means I actually do have the right energy to work through the rest of the day.

This 15 mins also allowed me to be on my feet active while I cook and clean. You don't know the wonders of this until you've tried, my friend.
